La pezzogna รจ un pesce della famiglia delle Sparidae, e vive nel Mediterraneo. E' un pesce da acque profonde, molto saporito.

L’autentica pezzรณgna รจ quella del golfo di Napoli o pescata al largo di Pozzuoli, Baia .
La pezzรณgna รจ ritenuto tra i migliori pesci esistenti.

spicchi d’agli mondati e tritati finemente

L'esecuzione รจ semplice,si pulisce accuratamente il pesce, eviscerandolo e lavandolo un piรน volte. Non va desquamato.Ponetelo sulla carta da forno dentro una teglia.Ricoprendolo completamente di sale grosso marino.
Mettetelo in forno giร scaldato a 180 °C e lasciatelo per mezz'ora-quaranta minuti a seconda della dimensione. Questo ha richiesto quasi 40 minuti!
Tolto dal forno, spaccate il guscio di sale e pulite il pesce, l'involucro del sale grosso consente di ottenere una cottura tipo "al coccio", lasciando quindi il pesce molto morbido e gustoso.
Impiattate con l'aggiunta di olio , aglio e prezzemolo mondati e tritati finemente servirlo a tavola caldissimo.A me piace senza condimento come la vedete in foto, provatela ha un sapore inconfondibile.
